Throughout his culinary career, Dustin (the Chef) has bought food from this region for forever, farmers in Vernon County , farms in the nearby Driftless part of Minnesota, locality of food and the distance food travels, and really supporting local farms is always something that has always been important to us.
Two of the founders of Fat Porcupine Noodle Bar are Brie Roland and Peter Beard. They share with us the origins of the name, why they all decided to relocate to La Crosse, Wisconsin, what their philosophy is with food and how they are moving forward with a brand new restaurant in a pandemic.
